Recipe for Accompanying Dish
RECIPE FOR FARMHOUSE CHICKEN WITH GRAIN MUSTARD
Ingredients :
– 1 farmhouse chicken, cut into pieces
– 3 tablespoons grain mustard
– 2 tablespoons Dijon mustard
– 200 ml crème fraîche
– 2 shallots, finely chopped
– 2 garlic cloves, minced
– 200 ml chicken broth
– 2 tablespoons olive oil
– Salt and pepper to taste
– Fresh thyme and bay leaf
– Fresh parsley, for garnish
Instructions :
1. Prepare the Chicken : Season the chicken pieces with salt and pepper.
2. Cook the Chicken : In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chicken and brown on all sides. Remove the chicken and set aside.
3. Make the Mustard Sauce : In the same skillet, sauté the shallots and garlic. Add the grain mustard and Dijon mustard, mixing well.
4. Deglaze : Pour in the chicken broth, scraping the browned bits from the bottom of the skillet. Add the thyme and bay leaf.
5. Simmer : Return the chicken to the skillet. Cover and simmer on low heat for about 30 minutes, until the chicken is thoroughly cooked.
6. Add the Cream : Stir in the crème fraîche and let simmer for another 10 minutes. Adjust the seasoning if necessary.
7. Serve : Serve the chicken topped with the mustard sauce and garnished with fresh parsley.
